This protein apple crisp is a warm, single-serve dessert packed with cinnamon-spiced tender apple and a golden oat-and-nut-butter crumble — ready in under 10 minutes and built with vanilla protein powder for a treat that actually nourishes.

Ingredients

  • ½ cup apple, diced small
  • ¼ tsp cinnamon
  • 1 tbsp vanilla protein powder (for filling)
  • 1 drop lemon juice
  • 1 tbsp vanilla protein powder (for topping)
  • 1 pinch salt
  • 1 tbsp nut butter (almond or peanut)
  • 1 tsp milk or water
  • ¼ cup rolled oats

Instructions

  1. Toss diced apple with cinnamon, 1 tbsp protein powder, and one drop of lemon juice until evenly coated.
  2. Spread the apple mixture into a small ramekin or microwave-safe bowl in an even layer.
  3. In a separate bowl, stir together 1 tbsp protein powder, a pinch of salt, 1 tbsp nut butter, and 1 tsp milk or water until a crumbly mixture forms. Fold in the rolled oats until evenly combined.
  4. Spoon the crumble evenly over the apple base, covering it fully without pressing down.
  5. Microwave on high for 2–3 minutes until the apple softens and the topping sets — or bake at 350°F for 18–20 minutes until golden and bubbling.
  6. Let rest for 2 minutes before eating so the filling thickens and the topping firms up.
  7. Serve warm, plain or topped with a spoonful of Greek yogurt.

Notes

  • Dice the apple to about ¼ inch for even cooking — larger chunks stay too firm, especially in the microwave.
  • No protein powder? Substitute 1 tsp almond flour plus a small drizzle of maple syrup for binding.
  • Refrigerate leftovers in a covered container for up to 2 days; reheat in the microwave for 60 seconds. Not recommended for freezing.
