Ingredients
3 cups of all-purpose flour
1 teaspoon of baking soda (definitely not baking powder!)
½ teaspoon of apple pie spice or ground cinnamon
½ teaspoon of salt
1 ½ cups of chopped pecans
3 large eggs
1 cup of vegetable oil
2 cups of firmly packed light brown sugar
2 teaspoons of vanilla extract
Choose 3 medium or 2 large baking apples like Granny Smith, Golden Delicious, or McIntosh
Top with caramel glaze or a sprinkle of powdered sugar
Optional garnish: ¼ cup of pecan halves and pieces
Instructions
Prepare your ingredients: Gather fresh apples, pecans, and baking staples. Peel, core, and chop apples for consistent texture.
Mix dry ingredients: Sift all-purpose flour, baking soda, apple pie spice, and salt for even leavening.
Blend wet ingredients: Whisk eggs, vegetable oil, light brown sugar, and vanilla until smooth.
Combine mixtures: Gradually incorporate dry ingredients into the wet mixture, stir just until combined.
Add apples and pecans: Fold in chopped apples and pecans for texture and crunch.
Bake: Pour into a greased dish and bake at 350°F (175°C) for 50-60 minutes until aromatic.
Prepare caramel glaze: On the stovetop, cook brown sugar, butter, and cream, then cool.
Apply glaze: Drizzle over the slightly cooled cake, garnish with pecan halves.
