Ingredients

For the Dipping Sauce:

  • 2 tablespoons mayonnaise
  • 2 tablespoons sour cream
  • 1½ tablespoons ketchup
  • 1½ teaspoons prepared horseradish
  • ½ teaspoon sweet paprika
  • ¼ teaspoon salt
  • ⅛ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper

For the Fried Onion:

  • Vegetable oil, for frying
  • 1 large Vidalia onion (approximately 1 pound)
  • 1½ cups all-purpose flour
  • 2 tablespoons cornstarch
  • 1½ teaspoons sweet paprika
  • 1½ teaspoons garlic powder
  • 1½ teaspoons salt
  • ½ teaspoon black pepper
  • 1½ to 2 cups buttermilk

Instructions

  1. In a medium bowl, mix mayonnaise, sour cream, ketchup, horseradish, paprika, salt, black pepper, and cayenne pepper until well combined. Cover and refrigerate until ready to serve.
  2. Heat oil in a deep fryer or large pot to 375°F.
  3. Cut ½ inch off the top of the onion and peel the outer skin. Place cut-side down on a cutting board.
  4. Starting ½ inch from the root, make a downward cut through the center of the onion to the cutting board. Repeat to make a total of 16 evenly spaced cuts around the onion.
  5. Turn the onion over and gently separate the “petals” to create the bloom.
  6. In a large bowl, whisk together flour, cornstarch, paprika, garlic powder, salt, and pepper.
  7. Pour buttermilk over the onion, ensuring it gets between all petals. Shake off excess.
  8. Generously coat the onion with the flour mixture, ensuring it gets between all petals.
  9. Carefully place the onion in the hot oil, cut-side down. Fry for 2-3 minutes, then flip and fry for another 2-3 minutes until golden brown.
  10. Remove and drain on paper towels. Serve immediately with the prepared dipping sauce.
