Easy Cheesy Chicken and Rice Casserole recipe with tender chicken, creamy sauce & melted cheese. Perfect one-dish comfort food ready in 45 minutes!

Ingredients

  • 2 cups cooked chicken, shredded
  • 1½ cups cooked rice
  • 1 cup shredded cheddar cheese
  • 1 cup frozen mixed vegetables
  • 1 can cream of chicken soup
  • 1 cup chicken broth
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Cooking spray

Instructions

  • Step 1: Preheat your oven to 350°F (175°C). Spray a 9×13-inch baking dish generously with cooking spray, ensuring you coat the sides as well as the bottom.
  • Step 2: In a large mixing bowl, combine the cream of chicken soup and chicken broth. Whisk until completely smooth—this creamy base is what makes the casserole so luxurious.
  • Step 3: Add the garlic powder, onion powder, salt, and pepper to the soup mixture. Stir well to distribute the seasonings evenly throughout the liquid.
  • Step 4: Fold in the cooked rice, shredded chicken, and frozen mixed vegetables (no need to thaw). Mix gently but thoroughly, ensuring every grain of rice and piece of chicken is coated with the creamy mixture.
  • Step 5: Transfer the mixture to your prepared baking dish, spreading it evenly with a spatula. The surface should be relatively level for even cooking.
  • Step 6: Sprinkle the shredded cheddar cheese evenly over the top, creating a beautiful golden blanket that will become irresistibly bubbly and slightly crispy.
  • Step 7: Cover tightly with aluminum foil and bake for 25 minutes. Remove the foil and continue baking for 10-15 minutes until the cheese is golden and the edges are bubbling.
  • Step 8: Let the casserole rest for 5 minutes before serving. This allows the flavors to settle and makes it easier to cut clean portions.
