Crispy chile ground beef and cauliflower protein bowls are a high-protein, low-carb weeknight dinner ready in 35 minutes. Sweet, spicy, and sticky beef tops golden roasted cauliflower for a bold, satisfying bowl.

Ingredients

  • 1 pound cauliflower florets, cut into bite-size pieces
  • 1 pound extra lean ground beef (93/7 recommended)
  • 1½ tablespoons (24g) olive oil, divided
  • ¼ cup (64g) tomato paste, ideally double or triple concentrated
  • 2 tablespoons (42g) honey
  • 2 tablespoons (30g) chili crunch
  • 2 tablespoons (30g) coconut aminos, or low-sodium soy sauce
  • 2 tablespoons (30g) black vinegar, or balsamic vinegar
  • ⅓ cup water
  • ¼ teaspoon kosher salt
  • 4 scallions, thinly sliced (whites and greens separated)

Instructions

  1. Preheat the oven to 425°F and line a sheet pan with parchment paper.
  2. Toss cauliflower florets with 1 tablespoon olive oil and ¼ teaspoon kosher salt, then spread in a single layer on the sheet pan.
  3. Roast cauliflower for 20 to 25 minutes, flipping once halfway through, until edges turn deep golden and centers are tender.
  4. While the cauliflower roasts, whisk tomato paste, honey, chili crunch, coconut aminos, black vinegar, and water in a small bowl until smooth.
  5. Heat remaining ½ tablespoon olive oil in a large skillet over medium-high heat until shimmering.
  6. Add ground beef in a flat, even layer and leave undisturbed for 3 to 4 minutes to build a crispy crust.
  7. Break the beef apart with a wooden spoon, stir in scallion whites, and cook 3 to 4 more minutes until deeply browned and internal temperature reaches 160°F.
  8. Pour the sauce over the beef and stir to coat, scraping up caramelized bits from the bottom of the pan.
  9. Simmer 2 to 3 minutes until the sauce clings and the beef looks glossy and sticky.
  10. Divide roasted cauliflower between 4 bowls, top with crispy chile beef, and finish with scallion greens.
