Crispy Garlic Cod Bites are a delightful seafood treat, perfectly seasoned and coated for maximum crunch.

Ingredients

  • 1 lb fresh cod fillets, cut into bite-sized pieces
  • 1 cup all-purpose flour, for dredging the fish
  • 1 teaspoon salt, divided for seasoning and coating
  • ½ teaspoon black pepper, to taste
  • 1 teaspoon garlic powder, for a strong garlic aroma
  • 2 large eggs, beaten for coating
  • 1 cup panko breadcrumbs, for extra crunch
  • ½ cup grated Parmesan cheese, for a nutty flavor in the coating
  • Vegetable or canola oil, for frying
  • ½ cup mayonnaise, for a creamy dip base
  • 2 tablespoons fresh lemon juice, for tanginess
  • 1 teaspoon lemon zest, for a bright citrus flavor
  • ½ teaspoon black pepper, for a peppery bite
  • 1 clove garlic, minced for flavor
  • 1 pinch salt, to taste

Instructions

  1. Prepare the cod by patting pieces completely dry with paper towels, then season with half of the salt and black pepper.
  2. Set up your breading station with three shallow bowls: flour mixed with garlic powder in the first, beaten eggs in the second, and panko combined with Parmesan cheese in the third.
  3. Dredge each cod piece in the seasoned flour, shaking off excess, then dip in beaten eggs, allowing extra to drip off.
  4. Press the cod firmly into the panko-Parmesan mixture, ensuring all sides are well-coated for maximum crunch.
  5. Heat about ½ inch of oil in a large skillet over medium-high heat until it reaches 350°F.
  6. Carefully lower coated cod bites into hot oil and fry for 2-3 minutes per side until deeply golden brown and crisp.
  7. Meanwhile, whisk together all dip ingredients in a small bowl until smooth and well-combined.
  8. Transfer fried cod bites to a paper towel-lined plate to drain, sprinkle with remaining salt while still hot, and serve immediately alongside the lemon pepper dip.

Notes

  • Best enjoyed fresh from the fryer for maximum crispiness.
  • Store leftovers in an airtight container lined with paper towels for up to 2 days.
