Ingredients
12 lasagna noodles (choose either regular or oven-ready)
1 lb shrimp, peeled and deveined
4 cloves of garlic, minced
4 tablespoons unsalted butter, divided
1 tablespoon olive oil
2 tablespoons lemon juice
1 ½ cups heavy cream
1 cup Parmesan cheese, grated
2 cups mozzarella cheese, shredded
1 cup ricotta cheese
2 tablespoons fresh parsley, chopped
½ teaspoon salt
½ teaspoon black pepper
¼ teaspoon red pepper flakes (optional, for a spicy kick)
Instructions
Prepare Noodles: Cook regular lasagna noodles according to package instructions if not using oven-ready. Drain and set aside.
Cook Shrimp: In a skillet, melt half the butter with olive oil over medium heat. Add minced garlic and sauté until fragrant.
Add Shrimp: Toss shrimp with salt, pepper, and red pepper flakes. Cook until pink and opaque, about 2-3 minutes. Remove shrimp, keep garlic butter in pan.
Make Sauce: Pour lemon juice and heavy cream into the skillet. Stir in Parmesan cheese until melted and sauce thickens slightly.
Assemble Layers: Spread a thin layer of sauce in the baking dish. Layer noodles, ricotta cheese dollops, shrimp, sauce, and mozzarella cheese. Repeat layers finishing with mozzarella on top.
Bake: Cover with foil and bake at 375°F (190°C) for 25 minutes. Remove foil and bake 10 minutes more until bubbly and golden.
Garnish and Serve: Sprinkle fresh parsley before serving for color and fresh flavor.
