It was a chilly winter evening when I first stumbled upon the idea of creating a Golden Seared Cod with Herb Butter Sauce.

Ingredients

  • Four 6 oz cod fillets
  • Two tablespoons of olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Four ounces of unsalted butter
  • One minced clove of garlic
  • Juice from half a lemon
  • Three tablespoons of finely chopped fresh parsley
  • Two tablespoons of chopped fresh dill
  • One tablespoon of chopped fresh chives

Instructions

  • Preparation: Start by placing the cod fillets on a clean cutting board. Pat them dry with a paper towel to ensure a perfect sear. Season both sides with salt and freshly ground black pepper.
  • Coating and Searing: Lightly coat each fillet in flour, shaking off excess. In a nonstick skillet, heat 2 tablespoons of olive oil over medium heat. Once shimmering, add cod fillets and cook until golden and crispy, about 3 to 4 minutes per side.
  • Resting the Fillets: Transfer seared fillets to a platter and tent with foil to keep warm, allowing juices to redistribute for a tender texture.
  • Creating the Herb Butter Sauce: In the same skillet, sauté minced shallot until soft. Add white wine, lemon zest, and juice, simmering until reduced by half. Whisk in butter and herbs until smooth, seasoning to taste.
  • Assembling and Serving: Drizzle the luscious sauce over warm cod fillets. Serve immediately for an aromatic and flavorful experience.
