Ingredients

  • 2 boneless, skinless chicken breasts
  • 1/4 cup honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • 1 red bell pepper, chopped into bite-size pieces
  • 1 yellow bell pepper, chopped into bite-size pieces
  • 2 cups chopped spinach
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions

  • Preheat your oven to 375°F (190°C).
  • Prepare the Glaze: In a small bowl, combine honey, Dijon mustard, half of the olive oil, paprika, salt, and pepper. Mix well until you achieve a smooth consistency.
  • Marinate the Chicken: Brush the chicken breasts with half of the honey mustard glaze, reserving the rest for later. Let them marinate for at least 10 minutes.
  • Cook the Vegetables: Toss the chopped bell peppers and spinach in the remaining olive oil, season with salt and pepper, and spread them out on a baking tray.
  • Bake: Place the marinated chicken breasts on top of the vegetables in the baking tray. Bake in the preheated oven for 25-30 minutes, or until the chicken is thoroughly cooked and the vegetables are tender.
  • Final Glaze: In the last 5 minutes of baking, brush the remaining honey mustard glaze over the chicken to enhance the flavor and create a more golden crust.
  • Garnish and Serve: Sprinkle freshly chopped parsley over the cooked chicken and vegetables before serving.

Notes

  • Ensure the chicken is cooked to an internal temperature of 165°F (74°C) to ensure it is safe to eat.
  • You can substitute spinach for kale or any other leafy greens you prefer.
  • For a spicier kick, add a pinch of crushed red pepper flakes to the honey mustard glaze.
