Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon almond extract
2 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
Nonpareil sprinkles for decoration
Instructions
Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper for easy cleanup and to prevent sticking.
Cream the softened butter and granulated sugar together in a large mixing bowl using an electric mixer on medium speed for about 3 minutes, until light and fluffy.
Beat in the eggs one at a time, making sure each is fully incorporated before adding the next. Add the almond extract and mix until well combined.
Whisk together the all-purpose flour, baking powder, and salt in a separate bowl. Gradually add this dry mixture to the wet ingredients, mixing on low speed until just combined.
Roll the dough into 1-inch balls using your hands and place the dough balls about 2 inches apart on the prepared baking sheets. Gently press down slightly to flatten the tops.
Sprinkle the cookies generously with nonpareils.
Bake for 10-12 minutes or until the edges are just set but not browned.
Notes
Make sure your butter is softened but still cool to the touch.
Don’t rush the butter-sugar creaming process.
When rolling the dough balls, use a light touch.
These cookies are done when the edges are just set but still appear slightly underbaked in the center.
Press nonpareils gently into the tops of cookies before baking.
