A creamy, comforting one-pan tomato pasta where everything cooks together in a single skillet. Silky tomato-Parmesan sauce, pantry staples, and 30 minutes deliver a warm, family-friendly weeknight dinner.

Ingredients

  • 8 ounces pasta (penne or rigatoni)
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes
  • 2 cups vegetable broth
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt to taste
  • Black pepper to taste
  • Fresh basil leaves for garnish

Instructions

  1. Warm olive oil in a 12-inch deep skillet over medium heat until it shimmers, about one minute.
  2. Add chopped onion and cook for 3–4 minutes until softened, fragrant, and just turning translucent.
  3. Stir in minced garlic and cook for 30 seconds until fragrant — do not let it brown.
  4. Pour in diced tomatoes with their juices, dried basil, oregano, and red pepper flakes; stir to combine.
  5. Pour in 2 cups vegetable broth, add the dry pasta, and stir so every noodle is submerged in the liquid.
  6. Bring to a gentle boil, then reduce to medium-low and cook uncovered for 10–12 minutes, stirring often, until pasta is tender and liquid has reduced.
  7. Lower the heat, pour in heavy cream, and stir until fully combined.
  8. Sprinkle in grated Parmesan, stir off the heat, and let the sauce turn velvety and glossy.
  9. Taste, season with salt and black pepper, and top with torn fresh basil leaves before serving.

Notes

  • Stir often during the simmer to prevent the pasta from sticking to the bottom of the skillet.
  • Pull the pan off the heat before adding the cream to prevent splitting or graininess.
  • Use freshly grated Parmesan from a block — pre-shredded cheese resists melting smoothly.
  • If the pasta looks thirsty before tender, splash in an extra ¼ cup broth.
