This One Pot Chicken Alfredo is a creamy and flavorful dinner option. Quick to make, perfect for families, and leaves minimal cleanup!

Ingredients

  • 4 tablespoons olive oil, separated
  • 1.5 pounds diced chicken breast
  • 4 cloves minced garlic
  • 1 quart low-sodium chicken broth
  • 2 cups heavy cream
  • 1 pound penne pasta
  • 4 cups freshly shredded Parmesan cheese (using a microplane)
  • Salt and pepper, to taste
  • Parsley, for garnish (optional)

Instructions

  • Prepare the Chicken: Season chicken breasts with salt, pepper, and garlic powder. Slice into bite-sized pieces for even cooking.
  • Cook the Chicken: Heat oil in a large pot over medium heat. Add chicken, stirring occasionally until golden brown and aromatic.
  • Add the Liquid and Pasta: Pour in chicken broth and milk. Stir in uncooked fettuccine, fully submerging for even cooking. Let it simmer.
  • Create the Sauce: Stir in heavy cream and parmesan. Allow it to melt and thicken. It’s ready when sauce clings to the pasta, cheesy and creamy.
  • Final Adjustments: Check seasoning, adding more salt or pepper if needed. Garnish with parsley for a fresh, aromatic finish.
