Creamy Palmetto cheese transforms ordinary potato salad into something extraordinary—rich, indulgent, and loaded with all the flavors of a perfect baked potato.

Ingredients

  • 6 medium-sized red potatoes
  • 11 oz. Palmetto Cheese, any variety
  • ½ cup bacon, cooked and chopped
  • ¼ cup sour cream
  • ¼ cup sliced green onions
  • 2 tablespoons apple cider vinegar
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • Additional chopped bacon and sliced green onion for garnish

Instructions

  1. Bring a large pot of salted water to a boil and add the red potatoes whole (don’t peel them). Cook for 15-20 minutes until fork-tender—they should pierce easily but not fall apart when you test them.
  2. Drain the potatoes thoroughly and let them cool for about 5 minutes until they’re comfortable to handle. Cut them into bite-sized chunks, leaving the skins on for extra texture and color.
  3. Allow the Palmetto cheese to come to room temperature while the potatoes cool—this makes it much easier to fold in without clumping.
  4. Combine the warm potatoes with the Palmetto cheese in a large mixing bowl, gently folding until each piece is coated.
  5. Fold in the sour cream, chopped bacon, and sliced green onions until everything is well combined. Add the apple cider vinegar, salt, and pepper, then gently mix again.
  6. Taste and adjust the seasoning as needed—you might want a pinch more salt or an extra splash of vinegar depending on your preference.
  7. Garnish with additional bacon and green onions just before serving. This salad tastes great immediately while slightly warm, or you can chill it for 30 minutes to let the flavors meld together.

Notes

  • For best results, serve this Palmetto Loaded Baked Potato Salad within 2 hours of making it, or store covered in the refrigerator for up to 3 days.
  • Test doneness properly by piercing potatoes with a fork—the potato shouldn’t crack or crumble when lifted.
  • Mixing warm potatoes with the cheese creates a smoother, more cohesive coating.
  • Cook bacon until crispy to maintain crunch.
  • Slice green onions thin for better distribution and appearance.
  • Season in stages, tasting after adding vinegar.
