Ingredients
For the pound cake:
8 oz unsalted butter, softened
8 oz cream cheese, softened
1 3/4 cups granulated sugar
5 large eggs, room temperature
1 tbsp vanilla extract
2 1/4 cups all-purpose flour
1 1/2 tsp baking powder
1/2 tsp salt
For the trifle:
5 large peaches (around 3 ½ lbs)
1/4 cup granulated sugar
1 tbsp lemon juice
3 cups heavy cream
1/2 cup powdered sugar
2 tsp vanilla extract
Instructions
Prepare the pound cake: Begin by combining 8 oz of room temperature unsalted butter and 8 oz of softened cream cheese in a stand mixer. Beat until the mixture is light and fluffy, approximately 3-4 minutes. You’ll notice a creamy, sumptuous texture forming.
Add sweetness and flavor: Gradually incorporate 1 3/4 cups of granulated sugar, ensuring each granule dissolves. Add 5 room temperature eggs one at a time, followed by 1 tbsp of vanilla extract, melding together harmoniously.
Mix dry ingredients: In a separate bowl, sift together 2 1/4 cups of all-purpose flour, 1 1/2 tsp of baking powder, and 1/2 tsp of salt. Gently fold these into the wet mixture until a smooth batter forms.
Bake to perfection: Pour the batter into a greased and floured baking pan, smoothing the top. Bake in a preheated 325°F oven for about 40 minutes, or until golden and a toothpick inserted comes out clean. Let it cool completely.
Prepare the peaches: Boil the peaches briefly to peel easily, then slice. Toss them with 1/4 cup of granulated sugar and 1 tbsp of lemon juice, letting the flavors meld.
Whip the cream: In a chilled bowl, beat 3 cups of heavy cream with 1/2 cup of powdered sugar and 2 tsp of vanilla extract until firm peaks form. The whipped cream should be smooth, light, and fragrant.
Assemble the trifle: Cut the cooled pound cake into cubes, then layer it in a trifle dish with whipped cream, peach slices, and repeat. Ensure the final layer is whipped cream, topped with a few peach slices for a beautiful finish.
Chill and serve: Refrigerate the trifle for at least an hour to allow the flavors to marry. The result is a visually stunning and aromatic treat with layers of texture and flavor.
