I’ve found that Pecan Pie Cookies are unbelievably easy to prepare and packed with delightful flavors thanks to pecans, brown sugar, and butter.

Ingredients

  • 1/2 cup of softened unsalted butter
  • 1/2 cup of granulated sugar
  • 1 large egg yolk
  • 1 teaspoon of vanilla extract
  • 1 1/4 cups of all-purpose flour
  • 1/4 teaspoon of salt

For the pecan filling:

  • 1/2 cup of chopped pecans
  • 1/4 cup of packed brown sugar
  • 1/4 cup of light corn syrup
  • 1 tablespoon of melted unsalted butter
  • 1/2 teaspoon of vanilla extract
  • A pinch of salt

Instructions

  • Prepare the Filling: Whisk ingredients (except pecans) in a saucepan over medium heat until bubbly. Cool and refrigerate.
  • Make the Dough: Cream butter with sugars until fluffy. Blend in egg yolk and vanilla, then milk. Combine with dry ingredients.
  • Shape the Cookies: Chill dough, roll into a log, and slice into 1.25-inch balls. Flatten and create a divot for filling.
  • Add the Filling: Spoon pecan mixture into each divot, avoiding overflow.
  • Bake and Cool: Preheat oven to 350°F. Bake cookies on parchment-lined sheets for 10-12 minutes until edges are golden. Cool before serving.
