Ingredients

For the Marinade:

  • ¼ cup olive oil
  • 3 tablespoons honey or maple syrup
  • 2 tablespoons Dijon mustard
  • Juice and zest of 1 lemon
  • Juice and zest of 1 orange
  • 4 cloves garlic, minced
  • 2 tablespoons fresh rosemary, chopped (or 1 tablespoon dried)
  • 2 tablespoons fresh thyme, chopped (or 1 tablespoon dried)
  • Salt and black pepper to taste

For the Salmon:

  • 1½ pounds salmon fillet, skin on
  • Fresh lemon slices and herbs for garnish

Instructions

  • Prepare the chicken: Cook your chicken breasts by boiling or roasting them. Once done, cool slightly, then shred with two forks to keep them juicy.
  • Mix the filling: In a bowl, combine shredded chicken, 1/2 cup ranch dressing, 1 cup salsa, and seasonings. Mix well for even coating and aromatic spices.
  • Warm the tortillas: To prevent cracking, microwave or skillet-heat tortillas briefly until soft and pliable.
  • Assemble the enchiladas: Spread two tablespoons of chicken mixture on each tortilla. Roll tightly, seam side down in a dish.
  • Prepare the top layer: Pour enchilada sauce over rolled tortillas. Cover with shredded cheese for a gooey topping.
  • Bake the enchiladas: Preheat the oven to 375°F (190°C). Bake covered for 15 minutes, then uncover for 10-15 minutes until cheese is melted and golden.
  • Garnish and serve: Top with cilantro, cool slightly, then serve with a fresh salad or rice.
