Ingredients
2 sticks (227g) unsalted butter
½ cup (100g) granulated sugar
1 cup (200g) dark brown sugar, lightly packed
1½ cups (190g) all-purpose flour
1 cup (127g) bread flour
1 teaspoon baking soda
1 teaspoon fine sea salt
1 teaspoon instant espresso powder (optional)
½ teaspoon baking powder
2 large eggs + 1 egg yolk, at room temperature
2 teaspoons vanilla extract
10 oz (283g) semisweet chocolate, chopped
1 cup toffee bits (homemade or store-bought, such as Heath brand)
Flaky sea salt, for topping
Instructions
Melt and Brown the Butter: Start by melting 2 sticks of unsalted butter in a saucepan over medium heat. Stir continuously until it turns deep golden-brown and releases a nutty aroma. Transfer to a heatproof bowl and let cool slightly.
Mix Sugars and Butter: In a large mixing bowl, combine the cooled browned butter with ½ cup granulated sugar and 1 cup dark brown sugar. Stir until smooth and well combined.
Incorporate Wet Ingredients: Add 2 large eggs, 1 additional egg yolk, and 2 teaspoons vanilla extract. Beat until the mixture is creamy and cohesive.
Prepare the Dry Mix: In a separate bowl, whisk together 1½ cups all-purpose flour, 1 cup bread flour, 1 teaspoon baking soda, 1 teaspoon fine sea salt, 1 teaspoon instant espresso powder (optional), and ½ teaspoon baking powder.
Combine Wet and Dry Ingredients: Gradually stir the dry mixture into the wet ingredients until just combined. The dough should be soft but structured.
Add Mix-Ins: Fold in 10 ounces of chopped semisweet chocolate and 1 cup of toffee bits, mixing until evenly distributed.
Chill the Dough: Wrap the dough in plastic wrap and refrigerate for at least 30 minutes. Chilling deepens flavor and improves texture.
Preheat and Prepare for Baking: Preheat oven to 350°F (175°C). Line baking sheets with parchment paper for even baking and easy removal.
Shape Cookies: Scoop and roll dough into 2-tablespoon-sized balls. Place on the baking sheets about 2 inches apart.
Bake and Finish: Bake for 10–12 minutes, or until edges are golden and centers are set. Sprinkle with flaky sea salt right after baking for a flavor boost.
Cool and Savor: Let cookies rest on the baking sheet briefly before transferring to a wire rack. Enjoy the buttery, chocolatey, toffee-rich goodness in every bite.
