Lemon Garlic Mixture:
2 tablespoons of olive oil
Juice and zest from one small lemon
2 large garlic cloves, crushed
½ teaspoon dried oregano
¼ teaspoon red chili flakes
½ teaspoon salt
¼ teaspoon ground black pepper
Salmon and Vegetables:
Olive oil spray
4 salmon fillets, skin on
1 bunch of asparagus, with woody ends trimmed
8 oz (225 g) of purple sprouting broccoli or broccoli florets
8 oz (225 g) cherry tomatoes
Extra lemon juice and lemon wedges, for serving
Fresh parsley, for garnishing
Instructions
Preheat your oven to 400°F (200°C) to ensure a consistent cooking temperature.
As it warms, prepare the lemon garlic mixture. In a small bowl, combine 2 tablespoons olive oil, the juice and zest of 1 small lemon, 2 large crushed garlic cloves, ½ teaspoon dried oregano, ¼ teaspoon red chili flakes, ½ teaspoon salt, and ¼ teaspoon ground black pepper.
Stir until well-mixed to create a fragrant, smooth paste that will infuse your traybake with vibrant flavors.
Next, prepare the vegetables and salmon. Lightly spray a large baking tray with olive oil.
Lay 4 salmon fillets, skin-side down, in the center of the tray. Arrange the trimmed asparagus, 8 oz of purple sprouting broccoli, and 8 oz of cherry tomatoes around the salmon.
Coat the salmon fillets with the lemon garlic mixture, using a spoon or brush to spread it evenly. Ensure each piece is generously covered to permeate the fillets with its zesty, aromatic essence.
Place the tray in the oven and bake for 18-22 minutes.
Once finished, remove the tray and garnish with extra lemon wedges and fresh parsley.
Serve immediately, allowing guests to squeeze additional lemon juice over their portions, enhancing the dish’s vibrant, fresh flavor profile.
