Ingredients
1 stick of butter, mostly melted
4 cloves of garlic, minced
1/2 lemon for zest and 1 tablespoon of juice
1 tablespoon of Dijon mustard
1 teaspoon of paprika
1/2 teaspoon of cayenne or red pepper flakes
1/2 teaspoon of dried thyme
1 teaspoon of red pepper flakes or cayenne powder
1 tablespoon of chives or green onions, sliced
2 tablespoons of fresh parsley, minced
Salt and pepper, adjusted to taste
Optional: rosemary sprig and smashed garlic for the cast iron preparation
Instructions
Preparation: Begin by letting the steak reach room temperature. Pat it dry and season generously with salt, pepper, and garlic.
Preheat the skillet: Heat a cast iron skillet over high heat until smoking hot for a perfect sear and a beautiful crust.
Searing the steak: Add avocado oil to the skillet, place your steak in, and listen for the sizzle!
Basting with butter: After flipping, add European butter, minced garlic, and herbs. Continuously spoon the melted butter over the steak.
Check doneness: Aim for medium-rare at 130°F with a meat thermometer and feel a slight springiness.
Rest the steak: Let it rest for at least 5 minutes to redistribute juices.
Make the cowboy butter: Mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices. Whisk until creamy.
Serve and enjoy: Slice the steak against the grain and top with a dollop of cowboy butter. Watch it melt into the meat, enhancing flavor with every bite.
