Ingredients
113 grams (8 tablespoons) of unsalted butter
340 grams (12 ounces) of semi-sweet chocolate chips
40 grams (½ cup) of Dutch-processed or regular cocoa powder
10 grams (2 teaspoons) of vanilla extract
2 large eggs
1 additional egg yolk
200 grams (1 cup) of granulated sugar
110 grams (½ cup) of dark brown sugar
125 grams (½ cup) of sourdough starter discard
120 grams (1 cup) of all-purpose flour
5 grams (1 teaspoon) of salt
Instructions
Prepare: Gather all your ingredients first—flour, cocoa powder, sugar, butter, chocolate, eggs, and sourdough starter.
Melt: In a double boiler, melt butter and chocolate until smooth and glossy.
Mix Dry: Whisk flour, cocoa powder, and salt together to prevent clumps.
Blend Wet: Mix eggs, sugar, vanilla, and sourdough starter until frothy.
Combine: Gradually stir dry ingredients into the wet mixture, then add the melted chocolate. Fold gently.
Pour: Pour batter into a lined baking dish. Smooth the top and tap to remove air bubbles.
Bake: Bake at 350°F (175°C) for 20-25 minutes. Edges should be set, with a few crumbs on a toothpick.
Cool: Let brownies cool in the pan before slicing.
