Ingredients Notes
- All-purpose Flour: Provides structure. I select unbleached, high-quality brands for consistent texture.
- Bread Flour: Increases chewiness. Use if available; substitute all-purpose for a softer cookie.
- Fine Sea Salt: Enhances sweetness and balances flavors. Choose a brand without additives for purity.
- Baking Soda & Powder: Offer lift and tenderness. Check freshness to ensure cookies rise perfectly.
- Egg: Binds ingredients. Preferably free-range for richer taste and better nutrition.
- Sourdough Starter Discard: Adds unique tang and depth. Use fresh discard for optimal flavor impact.
- Vanilla Extract: Heightens sweetness. I use pure extract for natural, robust fragrance.
- Unsalted Butter: Adds rich flavor. Cold, cubed enhances flaky texture; always opt for high-fat content.
- Light Brown Sugar: Adds moistness and a hint of caramel. Ensure it’s fresh to maintain moisture.
- White Granulated Sugar: Creates crispiness by contributing to the structure. Choose fine sugar for even mixing.
- Chocolate Chips: Anchor the cookie with melting goodness. Mix semi-sweet and milk for balanced sweetness.

Hi Emily 👋🏻 I gave this recipe a try last night. I was really excited about it!
I’m hoping you can help with a few questions. On the list of ingredients, It says to use baking powder. But then it doesn’t mention it again when mixing ingredients together. I went ahead and added the baking powder.
I used my sourdough starter discard straight out of the jar. (My starter had already risen and fell at this point)
My cookies turned out more like a
“biscuit” very round and fluffy.
Any ideas?
Sincerely,
Mandy
