Ingredients
113 g (8 tablespoons) unsalted butter, softened
70 g (⅓ cup) brown sugar
⅓ cup of honey
118.29 g (½ cup) sourdough discard
120 g (1 cup) all-purpose flour
120 g (1 cup) whole wheat flour
½ teaspoon baking soda
½ teaspoon salt
¼ teaspoon ground cinnamon (optional)
Instructions
Gather Your Ingredients: Have everything ready—sourdough starter, whole wheat flour, cinnamon, brown sugar, baking soda, salt, butter, and honey.
Prepare the Dough: Mix dry ingredients in a large bowl. Gradually add butter until crumbly, then incorporate honey and sourdough starter to form a dough.
Chill the Dough: Wrap in plastic and refrigerate for at least an hour to develop flavors and ease rolling.
Roll Out the Dough: On a floured surface, roll to a quarter-inch thickness for uniform crackers.
Shape the Crackers: Cut into rectangles and prick with a fork to avoid puffing during baking.
Bake to Perfection: Place on a lined baking sheet, baking at 350°F (180°C) for 15-18 minutes until golden and aromatic.
Cool: Let cool on a wire rack—they harden as they cool to achieve perfect crispiness.
