- 360 g (3 cups) of all-purpose flour, whole wheat flour, or a combination of both.
- 100 g (⅓ cup) sourdough starter discard.
- 150 g or 2 large eggs (or alternatively 3 medium eggs).
- 15 g (1 tablespoon) of extra virgin olive oil.
- 5 g (1 teaspoon) of sea salt.
- 20 g (1-2 tablespoons) of water.
- Gather Ingredients: Have sourdough starter, all-purpose flour, eggs, and salt on hand. Fresh, quality ingredients make a difference.
- Mix Ingredients: In a large bowl, combine flour and salt. Form a well, add eggs and starter, and bring dough together by hand.
- Knead the Dough: Knead on a floured surface for 10-12 minutes until smooth and elastic; it should be slightly sticky.
- Rest the Dough: Cover with a damp cloth, resting for at least 30 minutes to develop gluten for al dente texture.
- Roll Out Dough: Divide into pieces and roll to desired thickness using a machine or rolling pin, dusting with flour.
- Cut the Pasta: Shape into fettuccine, tagliatelle, or lasagna sheets, ensuring even cuts for uniform cooking.
- Cook the Pasta: Boil salted water, cook pasta for 2-4 minutes, and taste for firmness before draining.
