I’ve fallen for sourdough popovers because they’re delightfully easy to prepare with just a few ingredients, featuring the distinct tang of sourdough coupled with a crispy, airy texture.

Ingredients

  • 3 large eggs, at room temperature
  • 1 cup (240 g) milk, at room temperature
  • ½ cup (125 g) sourdough discard, at room temperature
  • 1 cup (120 g) all-purpose flour, can substitute with bread flour
  • ½ teaspoon salt

Instructions

  • Gather Ingredients: Use basic ingredients – sourdough starter, flour, milk, butter, eggs, and a pinch of salt.
  • Prepare the Batter: Whisk together sourdough starter, milk, and eggs until smooth and lump-free.
  • Add Dry Ingredients: Gradually mix in flour and salt gently to keep the mixture airy.
  • Melt the Butter: Melt butter until liquid and stir into batter. Avoid browning.
  • Preheat Oven and Pan: Preheat oven to 450°F (232°C) with a popover pan inside.
  • Fill the Pan: Remove hot pan, grease it, and fill each cup two-thirds full quickly.
  • Bake to Perfection: Bake for 20 minutes, lower heat to 350°F (175°C), and bake for another 15-20 minutes.
  • Cool Slightly: Allow popovers to cool for a few minutes before serving.
