I’ve found that Spicy Potsticker Soup is not only quick and easy to prepare, but it also bursts with vibrant flavors from fresh ingredients like ginger, garlic, and vegetables.

Ingredients

  • 1 tablespoon of vegetable oil
  • 1 cup of carrots, julienned
  • 4 cloves of garlic, minced
  • 3 tablespoons of fresh ginger, grated
  • 6 tablespoons of low-sodium soy sauce
  • 10 cups of low-sodium vegetable broth
  • 2 pounds of frozen potstickers (or substitute with frozen wontons or dumplings)
  • 1/4 cup of green onions, thinly sliced

Instructions

  • Prepare the Aromatics: Heat oil in a large pot, sauté garlic and ginger until fragrant. Add carrots, cooking until softened.
  • Build the Broth: Pour in broth and soy sauce, bringing to a simmer.
  • Cook the Potstickers: Gently add frozen potstickers, stirring to prevent sticking.
  • Finish with Garnishes: Garnish with sliced green onions.
