Ingredients

For the crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup melted butter
  • 1/4 cup granulated sugar

For the custard:

  • 2 cups whole milk
  • 1 cup heavy cream
  • 3/4 cup granulated sugar
  • 5 large egg yolks
  • 2 tsp vanilla extract
  • 3 tbsp cornstarch

For the whipped cream:

  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract

Instructions

  • Prepare the puff pastry: Roll out thawed pastry sheets on a floured surface for even thickness. Pastry should be cold and firm.
  • Bake to perfection: Preheat oven to 400°F (200°C). Place pastry on a parchment-lined sheet, prick with a fork, and bake until golden, about 15 minutes.
  • Craft the velvet custard: In a saucepan, whisk sugar, cornstarch, salt, then gradually add beaten eggs, milk, and cream. Stir over heat until thickened and remove from heat. Stir in melted butter.
  • Assemble the layers: Once the pastry cools, spread custard over one sheet, top with the other, and press gently.
  • Chill and set: Refrigerate the squares for at least 2 hours to firm up the custard. This will allow clean slicing and distinct layers.
