Garlic Butter Steak Bites with Creamy Parmesan Mashed Potatoes: seared sirloin in garlic butter served with velvety Parmesan Yukon Gold mashed potatoes — an easy, 45-minute weeknight comfort meal.

Ingredients

  • 1½ pounds sirloin steak, cut into 1-inch cubes (for the steak bites)
  • 1 tablespoon olive oil (for the steak bites)
  • 3 tablespoons unsalted butter (for the steak bites)
  • 4 cloves garlic, minced (for the steak bites)
  • ½ teaspoon salt, or to taste (for the steak bites)
  • ½ teaspoon black pepper (for the steak bites)
  • 1 tablespoon chopped fresh parsley (for finishing)
  • 2 pounds Yukon Gold potatoes, peeled and cut into chunks (for the mashed potatoes)
  • 4 tablespoons unsalted butter (for the mashed potatoes)
  • ½ cup warm whole milk, plus more as needed (for the mashed potatoes)
  • ½ cup freshly grated Parmesan cheese (for the mashed potatoes)
  • To taste Salt and black pepper (for the mashed potatoes)

Instructions

  1. Pat the sirloin cubes very dry with paper towels, then let them rest at room temperature for 15 to 20 minutes so they sear instead of steam.
  2. Cover the Yukon Gold chunks with cold, generously salted water in a large pot, then bring to a boil and simmer for 15 to 20 minutes, until a fork slides in with no resistance. Warm the milk in a small saucepan or the microwave while they cook.
  3. Heat the olive oil in a large skillet over medium-high heat until it shimmers, then season the steak with salt and pepper. Sear the cubes in a single layer (in two batches if needed), turning every 1 to 2 minutes, until deeply golden on all sides, about 5 minutes total for medium.
  4. Reduce the heat to medium-low, add the butter and garlic, and stir for 30 to 60 seconds until fragrant and glossy. Pull the skillet off the heat the moment the garlic turns pale gold, since it keeps cooking in the hot butter.
  5. Drain the potatoes well and return them to the warm pot for a minute to steam off excess moisture. Add the butter and let it melt into the hot potatoes before mashing until smooth.
  6. Pour in the warm milk a little at a time, stirring until fluffy, then fold in the Parmesan off the heat so it melts without clumping. If the mash looks a bit loose, it will thicken as it rests; add another splash of milk if needed.
  7. Taste the mash and adjust with salt and pepper after the Parmesan goes in, since the cheese adds saltiness.
  8. Spoon the mashed potatoes onto plates, pile the steak bites alongside, and drizzle with the garlic butter from the skillet. Finish with the chopped parsley for a fresh, bright contrast.
  9. Pro Tip Don’t crowd the skillet. Overcrowded steak releases moisture and turns gray instead of golden, so sear in batches if your pan is on the small side.
  10. Remember Steak bites cook fast, so keep the potatoes warm and everything else ready before the meat hits the pan.

Notes

  • Cut cubes evenly: Aim for true 1-inch sirloin cubes so every bite finishes at the same time.
  • Preheat the pan: Wait until the olive oil shimmers; a heavy cast-iron or stainless skillet builds a deeper crust.
  • Start potatoes first: Potatoes need 15 to 20 minutes while steak takes about 5, so get them boiling first.
  • Grate Parmesan fresh: Grate Parmigiano-Reggiano from the wedge and fold it in off the heat to avoid graininess.
  • Keep milk handy: The mash stiffens as it sits; add warm milk a tablespoon at a time to restore creaminess.
  • Reheat leftovers gently: Store steak and mash separately, reheat steak briefly in a skillet and loosen mash with warm milk.
  • Refrigerate within 2 hours: Store in airtight containers up to 3 days; keep components separate to maintain texture.
  • Freeze tips: Freeze steak in a single layer then bag, pack mash flat; thaw overnight and reheat gently. Freeze up to 2 months.
  • Revive the mash: Reheat over low heat or in 30-second microwave bursts, whisking in warm milk and a knob of butter as needed.
