2 cups granulated sugar
4 eggs
3 cups all-purpose flour
1 cup sour cream
2 tablespoons lemon zest
2 cups fresh blueberries
1 teaspoon vanilla extract

Instructions
Preheat your oven to 325°F (165°C) and generously grease a 9×5-inch loaf pan with butter, then dust with flour to prevent sticking.
In a large mixing bowl, cream together the softened butter and granulated sugar for about 4-5 minutes until light and fluffy. I like to rub the lemon zest into the sugar first to release those fragrant oils.
Add eggs one at a time, beating well after each addition until fully incorporated. Mix in the vanilla extract and continue beating until the mixture looks smooth and creamy.
In a separate bowl, whisk together the all-purpose flour and salt. In another small bowl, measure out the sour cream.
Gradually add the flour mixture to the butter mixture, alternating with sour cream (beginning and ending with flour). Mix on low speed just until combined after each addition – overmixing will develop too much gluten and toughen your cake.
Toss the fresh blueberries with a tablespoon of flour to prevent them from sinking. Gently fold them into the batter using a spatula, being careful not to crush the berries or overmix.
Spoon the batter into your prepared loaf pan and smooth the top with a spatula. The batter will be quite thick, which helps suspend those blueberries throughout.
Bake for 60-70 minutes, or until a toothpick inserted in the center comes out clean with a few moist crumbs. If the top browns too quickly, tent with foil during the last 15-20 minutes of baking.
