1 cup shredded cheese (cheddar and mozzarella blend)
2 cups pancake mix
1 cup milk
1 egg
4 tablespoons melted butter
1/4 cup maple syrup
Instructions
Cook the ground breakfast sausage in a skillet over medium heat until thoroughly browned, about 5-7 minutes. Break it into small crumbles with a wooden spoon as it cooks. Transfer to a paper towel-lined plate to drain excess grease.
In a large mixing bowl, combine the pancake mix, milk, egg, and melted butter. Whisk until just combined – I’ve found that a few small lumps actually make for fluffier pancake bites.
Fold the cooked sausage crumbles into the pancake batter using a rubber spatula. The batter should be thick enough to hold its shape when spooned.
Gently stir in the shredded cheese until evenly distributed. The cheese will begin to melt and create pockets of gooey goodness when the bites hit the heat.
Heat the same skillet over medium heat and lightly coat with cooking spray or butter. Using a large tablespoon or small ice cream scoop, drop rounded portions of batter into the hot skillet.
Cook the pancake bites for 2-3 minutes until golden brown on the bottom and bubbles form on the surface. Flip each bite carefully and cook for another 2 minutes until golden and cooked through.
Transfer the finished bites to a serving plate. These little treats puff up beautifully when properly cooked – they should feel springy to the touch when done.
Serve immediately while still warm, drizzled with maple syrup and topped with a small pat of butter that will melt enticingly into all the nooks and crannies.
Notes
Toast the sausage: After browning, cook it for an additional minute to develop deeper flavor that stands out against the sweetness of the pancake batter.
Control your heat: I’ve found medium-low is the perfect skillet temperature—too hot and the outside burns before the interior cooks through.
Perfect portion size: Use a tablespoon measure for consistent bites that cook evenly and look professional when plated.
Rest the batter: Let your mixed batter sit for 5 minutes before adding the sausage—this allows the leavening agents to activate for fluffier bites.
Cheese selection matters: Freshly grated cheese melts more smoothly than pre-packaged shredded varieties that contain anti-clumping agents.
